photos and enchiladas.

Of course happiness for me is taking pictures! But it makes me even happier to DO something with them. This was my project this week:

It makes me smile every time I look at it. And I am even happier to be able to say I mounted each photo myself, I didn't even have the lab do it! I feel so productive! LOL!

I realized I've been leaving Jason out of all the happiness this week... so the other night I took photos of one thing this week that made HIM happy: enchiladas! I really should make these more often, they don't take long at all and they are so yummy!

Enchiladas

2 lbs hamburger meat (can substitute chicken or turkey if desired)

2 packets or jars taco seasoning (I used 1 jar Taco Bell taco sauce and 1 packet Old El Paso seasoning- I like to mix & match)

Flour tortillas (as many as you think you will need)- I use the wheat ones

1 lg. can refried beans

1 can enchilada sauce

1 bag shredded Mexican cheese

Brown hamburger meat thoroughly, drain grease. Add taco seasoning/sauce and refried beans, stir until heated through. Put a couple of spoonfuls of meat/bean mixture inside shells and wrap, placing into a baking dish. Top with a generous drizzling of enchilada sauce and cheese. Bake at 350 degrees for 10-15 mins until cheese is melted to your liking. Enjoy!
